Do you have a taste for a Philly cheesesteak sandwich but don’t want the calories and carbs it provides? Well, how about replacing that carb-filled hoagie roll with garden zucchini. Philly cheesesteak zucchini boats have much more vitamins, and minerals contained then the classic sandwich counterpart.
I love coming up with new recipes or changing up old classics, with our garden veggies. Zucchinis are so prolific in the garden. I typically collect two to three a day, so I have to do something with them. If I am not dehydrating or freezing them for future use, then I am eating them fresh. These Philly cheesesteak zucchini boats are a great way to use up two to three medium-sized zucchinis in one meal to feed the family.

This full-on meal I calculated to be about $9.13 for four servings or about $2.28 per zucchini boat. Growing your zucchinis, peppers, onions, and seasonings can reduce the price immensely. My homesteader cost is roughly $6.83 by growing half the produce.

Philly Cheese Steak Zucchini Boats
Ingredients
- 2 medium zucchinis, …[$1.00]
- 2 tbsp. butter, …[$0.25]
- ½ medium onion, …[$0.25]
- ½ cup mushrooms, sliced…[$0.50]
- ½ medium sweet green pepper, sliced…[$0.25]
- ½ medium red sweet bell pepper, sliced…[$0.25]
- 1 pound ground beef, …[$4.00]
- 1 tsp. salt, …[$0.07]
- 1 tsp. garlic powder, …[$0.05]
- 1 tsp. Worcestershire sauce, …[$0.05]
- ½ tsp. black pepper, …[$0.46]
- 2 slices provolone cheese, cut in half…[$2.00]
Instructions
- Preheat oven to 350 °F. Clean and cut zucchinis in half lengthwise. Spoon out all the seeds forming a cavity. Place zucchinis in 13×8 casserole dish and bake for 10 minutes or until zucchinis are soft.
- While zucchinis are baking, sauté butter, onions, mushrooms, and all the peppers together for about 7-10 minutes in a large pan on medium heat or until all vegetables are soft.
- Add ground beef, salt, garlic, Worcestershire and black pepper to the skillet. Cook until all meat is browned and cooked through.
- Remove zucchinis from oven and fill them with the cooked meat mixture. Top with provolone cheese and bake in oven until cheese is all melted. This will take only a few minutes.
