Apple & Cider Scalloped Potatoes Recipe
I found this little number, Apple and Cider Scalloped Potatoes, in my 2007 Cooking Light cookbook. I have had that cookbook for nearly ten years now, and I can’t believe I have passed up making this recipe sooner – what a fantastic twist to an old recipe. The apples and apple cider come alive in this side dish. And you can get creative with the apple and cheese pairings in this scalloped potato recipe.
I don’t have a whole lot of choice when it comes to purchasing different cheeses. I have the standards; cheddars, mozzarella, goat, etc. So I typically use cheddar cheeses with this cider scalloped potatoes, but you can change it up. Apples go great with cheddars, Monterey Jack, Gouda, Jarlsberg, Gruyere, and Havarti cheeses. You can make this side dish recipe with a different combination of these types of cheeses.

Like with any cheese recipe, the cheese is what is making this recipe have a high cost. Unfortunately, we don’t make our cheese here so we must buy it like so many others. But I do have to say, at $0.83 per serving, the cost is not too expensive to make for a large family. And it is quite filling.

Apple & Cider Scalloped Potatoes
Ingredients
- 2 lbs. potato, peeled and thinly sliced…[$1.00]
- 2 medium apples, thinly sliced…[$0.50]
- 4 oz shredded cheese, cheddar, mozzarella, Gouda, or Jarlsberg…[$4.00]
- 3 tbsp. all purpose flour, …[$0.04]
- 1 cup milk, …[$0.23]
- 1 cup apple cider, …[$0.38]
- ½ cup chicken stock, …[$0.18]
- ½ tsp salt, …[$0.03]
- ¼ tsp. black pepper, …[$0.23]
- 1 pinch nutmeg, optional…[$0.05]
Instructions
- In a greased 3 quart casserole dish, make a thin layer sliced potato and apples then sprinkle on some cheese. Next make another layer of potato and apples. Repeat until you have only potato and apples on top with some cheese remaining in a bowl. This will be added on top later.
- In a medium saucepan, place flour and gradually add milk over medium heat. Whisk until blended.
- Add apple cider, broth, and seasonings. Bring saucepan to a boil over medium high heat, stirring often. Cook for about 5 minutes. The sauce with thicken.
- Pour apple cider mixture over layered potato, apple, and cheese mixture in casserole dish. Bake uncovered at 425 °F for 25 minutes.
- Add the remaining cheese on top of scalloped potatoes and bake for another 10-15 minutes uncovered or until potatoes are tender. Take out of oven and let stand for 10 minutes before cutting into it.
