Baked Pancake Casserole Recipe

We all know about pancakes, right? Light, buttery fried cakes perfect with fresh fruit, flavored syrups, and heaping amounts of whipping cream. How about baked pancakes? This is a pancake batter, but I easily baked it in a casserole dish and served it up, almost like a cake.
I love this recipe so much more than cooking single pancakes over a skillet on Saturday morning for the family. For one, it is all cooked at once instead of making small batches where people are eating in shifts. For a second, you get a thicker slice of pancake when baked in a casserole dish.
This recipe asks for milk, but you can substitute heavy cream for the milk if you wish. With all the fat from the heavy cream, expect the batter to be thicker than normal. The baked pancake will also be much richer in taste.
This casserole will rise much more than regular griddle pancakes as well. The smaller the casserole dish you use, the thicker the pancake pieces you can cut out and serve. When I made this recipe, I used a dish that was slightly smaller than 13 x 9 inch. But you can use a 13 x 9 casserole dish.
Now, add a candied bacon on the side. We make bacon all the time for breakfast and sometimes it is fun to add a bit of sweetness to the salty pork. Below is the recipe and how you can change it up.
Tip additions for both pancakes and bacon
Pancakes
- 1/2 cup dark chocolate chips & 1/2 cup white chocolate chips
- 3/4 cup fresh whole blueberries or cranberries or strawberries or cherries
- 1/2 cup of your favorite nuts, like walnuts or pecans
- You can substitute heavy cream for the milk. If you do, the batter will be thicker than normal.
Bacon
- Substitute any spices for the pumpkin spice in the recipe. Use apple pie seasonings or Chinese five spice.
- If you choose to add nuts and make it more praline, crush the nuts almost into powder otherwise I have found that the nut pieces fall off the bacon.
- Add some heat to the spices with cayenne powder,
- Best is to use thick butcher style bacon. The paper-thin bacon will give you problems.

I have calculated this fantastic breakfast recipe to cost about $2.57 for the entire casserole dish, or about $0.22 per serving slice. Since this is a basic pancake batter recipe, there aren’t too many ingredients we can make or raise in order to reduce the cost. We raise our eggs and make our vanilla extract which can make this slightly lower in price. But the really glorious thing about this recipe is that it is already quite cheap to make.

Instructions
Baked Pancake
- Preheat oven to 350 °F. Grease medium size casserole dish. Use a 13×9 dish if you double the recipe.
- In a medium bowl whisk together sugar, eggs, melted butter, vanilla, salt, and milk together.
- Blend in flour and baking powder and then pour batter in greased casserole dish. Bake for 30 minutes then take out and slice and serve.
Candied Bacon
- Lay out the pound of bacon on a sheet pan with a lifted rack inside to catch all the grease.
- In a small bowl, mix together brown sugar and spices.
- Bake bacon in the preheated oven until the bacon is half cooked to your liking.
- Take bacon out of oven and sprinkle sugar mixture. Put back in the oven and bake until sugar as melted and caramelized over each bacon strip.
