Beer Cheese Sauce with Bratwurst and Onion Topped Baked Potato Recipe
Oh, dear beer cheese sauce, how I love thee. I love you on nearly anything. As a mac and cheese are amazing and now on top of a warm baked potato. I certainly need to come up with a few more beer cheese sauce recipes for the summertime dinners.
I don’t know what’s cooking on your outdoor grill but ours has bratwurst. We have brats at least a few time a summer season. By August, I get a little bored with the typical grilled sausage on a bun with the fixings so I decided jazz it up and stuff it into a baked potato and top it with some homemade cheese made with beer.
I like this recipe not only because it tastes great but you can also make this inside on colder days or outside on the grill when the summer heat is too hot to be turning on the oven in the kitchen.

Bratwurst & Onion Stuffed Baked Potato with Beer Cheese Sauce
Ingredients
- 6 large baked potato, …[$2.50]
- 1 pkg bratwurst, …[$4.50]
- 1 large onion, sliced or rings…[$0.50]
- 2 tbsp. butter, …[$0.25]
- 2 tbsp. all purpose flour, …[$0.02]
- ½ cup beer, Miller,Bud, Michelob…[$0.75]
- ½ cup whole milk, …[$0.12]
- 2 oz. white cheddar cheese, …[$1.00]
- 2 oz. Colby Jack cheese, …[$1.00]
- ½ tbsp. salt, …[$0.04]
Instructions
- Throw potatoes, brats, and onions on the grill and cook accordingly. You may need to put the potatoes on first and cook the everything else later.
- In a medium saucepan, melt butter and whisk in flour over low-medium heat. Butter should thicken.
- Slowly add beer and cook for about 2 minutes to cook off alcohol.
- Slowly add milk and whisk until all smooth. Add all cheeses and salt. Stir often until melted.
- Cut open cooked potatoes and top with onions, bratwurst cut up, and beer cheese sauce.
