Carrot Cake Fruit Leather Recipe
I am so excited to show you this new recipe of mine. This is my concoction for a fruit leather recipe that tastes just like carrot cake. I made my carrot cake fruit leather with actual pureed carrots, fresh pineapples, and applesauce. Along with cinnamon and nutmeg, this hiking, backpacking, or just after-school snack is a perfect sweet treat for anyone in the family. You can dehydrate it perfectly, as I do in a Nesco Snackmaster Express Food Dehydrator with some extra Nesco American Harvest Fruit Roll-Up Sheet.
The height of my excitement hit when I could get full-on pureed carrots into fruit leather. Carrots are chopped full of Vitamin A, potassium, Vitamin K, and beta carotene, which is perfect for a vitamin boost out on the trails. The applesauce and pineapple have an abundance of Vitamin C, Vitamin B’s, and Vitamin E. This tastes so great, you don’t even know you are eating so many important vitamins and minerals. Well, at least the kids won’t!

If all the ingredients were purchased, the cost of this recipe would come to about $8.23 or $0.69 per large serving slice. My fruit roll-up slices are large, so you can most likely double the servings by cutting the pieces smaller if you wish. That cost would be about $0.34 per serving slice.
Growing your ingredients and purchasing what you can on a sale is also what can make this recipe nearly free. First, I buy my pineapples on sale at $0.99. Next, I grow my carrots and apples to make my applesauce. So in the end, my carrot cake fruit leather costs this homestead about $1.43 for the entire batch. This is excellent cheap hiking or after-school snack.

Carrot Cake Fruit Leather
Ingredients
- 2 cups carrots peeled, cleaned, chopped…[$0.50]
- 3 cups applesauce …[$3.30]
- 2 cups fresh pineapple, about 1 whole pineapple…[$4.00]
- 1 tsp. ground cinnamon …[$0.04]
- ½ tsp. nutmeg …[$0.18]
- ½ cup sweetened shredded coconut …[$0.21]
Instructions
- Steam or boil chopped carrots until soft. Puree along with apple sauce, pineapple, and seasonings. Stir in coconut.
- Pour onto a greased sheet and either bake at 135 °F in the oven or put into a dehydrator at 135 °F for 6-8 hours or until leather is soft, dry and still pliable but not sticky.
- Let the fruit leather cool completely then cut and store in an air-tight container.
