Chicken Apple Sausage Soup Recipe
Autumn is my favorite time of year, and cooking up this chicken apple sausage soup in the slow cooker is my favorite cool-weather soup. The soup or more like a stew is a crowd-pleaser, and you can be sure to have people coming back for more and more.
I made this soup when I had one chicken apple sausage and one large chicken bread left in the fridge. Separate, I had a hard time coming up with a dinner to feed my hungry crew, but together they became an amazing soup.
The apple cider soup bas is unique and fantastic. You can use either a chicken or turkey broth if you prefer. And if you don’t have an apple on hand, a pear works in a pinch. Or you can rehydrate dehydrated apple slices and then add them to the soup later.

I calculated this soup to cost about $11.53 for the entire batch or $1.44 per eight serving sizes. Obviously, the size of your serving will change the price of your serving.

- 3 cups chicken stock, …[$1.05]
- ½ large onion, chopped…[$0.50]
- 4 cloves garlic, minced…[$0.50]
- 2 bay leaves, …[$0.22]
- 2 tbsp. cornstarch, …[$0.07]
- 1 tsp. chili powder, …[$0.16]
- 1 tsp. paprika, …[$0.17]

- ½ tsp. black pepper, …[$0.35]

- 1-2 whole apples, chopped…[$1.39]
Instructions
- Rehydrate dried beans either overnight or heat up in water and bring to a boil until soft.
- In a skillet, brown chopped sausage and chicken breast together until completely cooked.
- In a slow cooker combine cooked meat, cider, stock, onion, garlic, and all seasonings. Set on low for 6 hours.
- Thirty minutes before serving, add in the chopped apples then serve. If you want softer apples let them simmer longer. If you want crispier apple bites, add right before serving.
