This coleslaw is easy to make and uses my homemade apple butter. You can easily substitute the store-bought version. When I made this recipe, my apple butter was a bit on the runny side, so if yours is not mixing well with the cabbage, then add a tablespoon or two of water. Serving this coleslaw on top of the sandwich gives the pulled pork a crunch and a different flavor dimension.
The chipotle pulled pork is not too spicy, but you can add more minced chipotle peppers if you like. I love slow cooking this pork tenderloin with half a bottle of Angry Orchard Hard Apple Cider. But apple cider is also a great substitute for the hard cider.

Apple Butter Slaw
- ½ small head cabbage, shredded or chopped…[$0.39]
- ¼ large onion, chopped…[$0.50]
- 2 large carrots, shredded…[$0.40]
- 1 large green apple, matchsticks or sliced thin…[$0.78]
- ½ pint apple butter, …[$1.28]
- 2 tbsp. apple cider vinegar, …[$0.04]

Instructions
Chipotle Pork
- In a bowl mix cider, broth, garlic, and pepper together.
- For a slow cooker, place pork and all other ingredients in cooker. Set cooker to low and cook for 6-8 hours. Pull apart with two forks to shred and keep warm in liquid.
- For a pressure cooker, place pork and other ingredients in and set to high. Cook for 30 minutes. Pull apart with two forks to shred and keep warm in liquid.
Apple Butter Slaw
- In a large bowl combine apple butter and vinegar together.
- Cut and shredded all veggies/fruit and put into bowl with apple butter sauce. Toss together, cover and store in refrigerator for at least 2-4 hours. You can make this slaw the night before as well.
