Cinnamon Roll Baked Oatmeal Breakfast Casserole Recipe
My cinnamon roll baked oatmeal is another fun take on breakfast. The family and I love anything cinnamon roll. I have made a cinnamon roll pound cake, and cinnamon roll pancakes just for starters, and both came out amazing.
As I may have said in previous posts, these baked oatmeal casseroles are perfect for making and baking on a Sunday morning. Baked oatmeal casseroles reheat amazingly for breakfasts throughout the week. My kids love it for breakfast before school. It is also healthy and hearty to keep the kids full until lunch.
The cinnamon roll baked oatmeal is simple yet tasty to eat. The base is an unsugared oatmeal base. My typical baked oatmeals have brown sugar or white sugar in it but with the sweet icing topping and brown sugared cinnamon mixture has quite enough sugar already within it.

Cinnamon Roll Baked Oatmeal
Ingredients
- ½ cup vegetable oil, …[$0.19]
- 4 large eggs, …[$0.92]
- 2 cups milk, …[$0.46]
- 2 tsp. baking powder, …[$0.08]
- 2 tsp. baking soda, …[$0.08]
- 1 tsp. vanilla extract, …[$0.70]
- 1 tsp. salt, …[$0.07]
- 7 cups quick oats , …[$5.46]
- 1 cup brown sugar, …[$0.47]
- ½ stick butter, melted…[$0.50]
- 3 tbsp. cinnamon, …[$0.36]
Instructions
- In a large bowl, whisk together the first 7 ingredients and then fold in the oats. Set aside.
- In a small bowl, stir together brown sugar, butter, and cinnamon and set aside.
- Grease an 8×8 baking dish and smooth ⅓ of oat mixture in the bottom of pan.
- Next layer ½ of the brown sugar mixture, then another ⅓ of oat, the last of brown sugar, and top with the remaining oat mixture.
- Cover and put in fridge for at least 2 hours or overnight.
- Bake oatmeal at 350°F for 40 minutes.
- Blend up some powder sugar and cream cheese for an optional topping.
