Cuban Pulled Pork with Coconut Cilantro Lime Rice and Roasted Corn and Black Beans
Pulled Cuban pork tenderloin is slow-cooked for eight hours. I marinated it in a mojo-style liquid made with orange and lime juice and slow-roasted. These two juices together give a citrusy Caribbean flair to a simple pork tenderloin roast. After eight hours of cooking, the pork is tender enough to pull apart with only two forks.
Along with the pork, you have a great accompaniment of two fantastic side dishes. The first option was coconut cilantro lime rice, and the second, I roasted corn and black beans. The rice is enhanced with a deliciously sweet flavor from the coconut milk. The sweetness goes perfectly with a slightly tangy bite of the lime juice. The roasted corn and black beans are sweetened with a small amount of brown sugar and spiced up with diced jalapeno peppers.
Furthermore, you have one complete meal that contains a protein source, a carbohydrate, and a veggie. A bonus is that the veggie has a good amount of protein with the black beans. Recently, I have been trying desperately to eat more protein and fewer carbohydrates. This meal is fantastic for that reason. It will fill you up without adding to your waistline. And fill you up for really cheap.

I am in absolute love with this recipe for all the reasons I stated above, but also for the low cost it takes to make this complete family recipe. There are a lot of ingredients to make this meal, but it all only costs $10.29 or $1.72 per serving slice. That cost is my kind of price to feed my hungry bunch.

Instructions
Cuban Pork
- Trim any excess fat off pork tenderloin. Slice slits into the pork but not all the way through. Put tenderloin into slow cooker.
- Whisk together oil, orange juice, lime juice, salt, cumin, oregano, red pepper flakes, pepper, and garlic. Rub mixture into cut pork tenderloin and pour all juices into slow cooker.
- Add in onions and bay leaf. Cover and cook on low for 8 hours.
- Pull pork apart with forks after cooking and shred to appropriate meat piece sizes. Serve hot
Roasted Corn & Black Beans
- While pork is slow cooking, toss together oil, corn, onion, jalapenos, brown sugar, and salt in a bowl.
- Boil dry soaked beans in a pot until soft. Drain and let beans cool down and add to corn mixture.
- Before serving meat, pour mixture on a baking sheet and bake at 350 degrees F for 15 minutes.
Coconut Lime Rice
- Rinse dry rice under water until water runs clear to remove most of the starch. Place rice in a saucepot along with the coconut milk.
- Heat rice on low heat and cover with a slight opening to let some steam out.
- When all the rice is cooked and the liquid has cooked off but not burned then stir in the lime juice and cilantro. Keep warm and serve with the remaining dinner.

Instructions

- Trim any excess fat off the 3 lb pork tenderloin. Slice slits into the pork, but not all the way through. Put the tenderloin in the slow cooker.
- Whisk together 2 Tbsp olive oil, ½ cup orange juice, ½ cup lime juice, 1 tsp salt, 1 tsp ground cumin, 1 tsp dry oregano, ¼ tsp crushed red pepper, ¼ tsp black pepper, and 1 Tbsp garlic powder. Rub the mixture into the cut pork tenderloin and pour all the juices into the slow cooker.
- Add in onions and bay leaf. Cover and cook on low for 8 hours.

Roasted Corn & Black Beans
