Mojo style Cuban pulled pork slow cooked with orange juice and lime juice. Accompanied with coconut cilantro lime rice and roasted corn and black beans side dishes to make an entire family meal.

Cuban Pork
Trim any excess fat off the 3 lb pork tenderloin. Slice slits into the pork, but not all the way through. Put the tenderloin in the slow cooker.
Whisk together 2 Tbsp olive oil, ½ cup orange juice, ½ cup lime juice, 1 tsp salt, 1 tsp ground cumin, 1 tsp dry oregano, ¼ tsp crushed red pepper, ¼ tsp black pepper, and 1 Tbsp garlic powder. Rub the mixture into the cut pork tenderloin and pour all the juices into the slow cooker.
Add in onions and bay leaf. Cover and cook on low for 8 hours.
Pull pork apart with forks after cooking and shred to appropriate meat piece sizes. Serve hot.
Roasted Corn & Black Beans
While pork is slow cooking, toss together 1 Tbsp olive oil, 2 cups sweet corn, ½ cup sweet onion, 2 Tbsp jalapenos, 1 Tbsp brown sugar, and ½ tsp salt in a bowl.
Boil dry-soaked ½ cup dry black beans in a pot until soft. Drain and let beans cool down, and add to corn mixture.
Before serving meat, pour mixture on a baking sheet and bake at 350 degrees F for 15 minutes.
Coconut Lime Rice
Rinse 1 cup rice under water until the water runs clear to remove most of the starch. Place the1 Tbsp lime juice rice in a saucepot along with the 2 cup coconut milk.
Heat rice on low heat and cover with a slight opening to let some steam out.
When all the rice is cooked and the liquid has cooked off but not burned then stir in the 1 Tbsp lime juice and 4 tsp fresh cilantro. Keep warm and serve with the remaining dinner.
