Diner Style Roast Beef Open Face Sandwich Recipe
For some reason, I had a massive craving for a diner-style roast beef sandwich. You know the one. The large plate with white bread, mashed potatoes, deli-style roast beef and thick beef gravy. To me, this meal screams comfort food. And yes, sometimes comfort food can equal not so healthy food. I say that because when I made this for dinner, it ended up becoming my cheat day for my low fat “diet”.
I hate using the word diet. Fab diets never work for me. I typically end up falling off the wagon, especially when it comes to the low carb diets like Atkins. Instead, I just eat better and in moderation, try to reduce my fat and sugar intake, and increase my movement. The pounds might not shed off as fast, but I will be healthier and over time, feel better.
Well, now back to my diner-style roast beef open-face sandwich. Let’s say it was a family hit. There was nothing the kids and husband didn’t like about it. Of course, they love meat and potatoes and gravy. Just can’t go wrong.
I made this dinner in a true cheap diner style. I used instant mashed potatoes that I found in the cabinet. There was about 1/4 of a box left open from all my dehydrated meals I was making from the camping and hiking season. I didn’t want the rest of the box to get moist and go bad, so I used them. Picking up a pack of deli roast beef and not having to bake an entire roast beef roast was also faster and easier. Plus, the taste was much more like the plates you get at the diner. The meal was a great meal for when you are in a rush and need to feed the gang fast.
Cost of this recipe.
This recipe serves four people, and I have rounded up the cost to about $10.67 for the entire recipe or about $2.67 per serving. The majority of the cost comes from the deli-style roast beef meat. We don’t, as homesteaders, grow or raise much from this recipe. Also, adding a second side dish like green beans or corn will add to the price unless you grow them as well.

Diner Style Roast Beef Sandwich
Ingredients
- 1 lb. deli roast beef, …[$5.50]
- 4 slices white bread, toasted optional…[$0.24]
- 2 cups mashed potatoes, leftover or instant variety…[$0.45]
- 3 cups green beans, …[$1.50]
Diner Gravy
- ½ stick butter, …[$0.50]
- ¼ cup flour, …[$0.06]
- 1 tsp onion powder, …[$0.06]
- 1 tsp garlic powder, …[$0.08]
- 1 tsp. Worcestershire sauce, …[$0.08]
- 2½ cups beef stock, depends on how thin the gravy…[$2.20]
Instructions
- Make the gravy in a medium sauce pot. Melt butter and sweat onions and garlic. Whisk in flour and until a smooth paste is made.
- Add in Worcestershire sauce and beef stock. Whisk to incorporate all ingredients and then let simmer until gravy thickens.
- Either heat up leftover mashed potatoes or make enough instant mashed potatoes for four servings; about 2 cups.
- Warm up roast beef in microwave or lay out on a baking sheet and heat up in the oven for 5 minutes.
- To serve, lay out one piece of bread, scoop on top with mashed potatoes using an ice cream scoop. Then fold on some roast beef and finally top with a healthy portion of beef gravy.
- Serve hot and enjoy.
Make sure you use a TEASPOON of Worcestershire sauce, not like a tablespoon. Bleh!
