Fresh Pineapple Salsa Recipe
Here is one of my favorite side dishes. Fresh pineapple salsa is not only easy to put together but is tasty with most anything. I typically make this recipe when I can get my hands on cheap fresh pineapples. This recipe uses about one pound of cut
Pineapple salsa goes perfectly with shredded pork or chicken tacos, as a unique side dish or topping for baked ham, or even to use solitary for corn chips. The family and I love it, and you will too.

Fresh Pineapple Salsa
Ingredients
- 1 lb. fresh pineapple, chunks (about 1 whole pineapple)
- 1/4 large red or sweet onion, chopped
- 1/2 large red sweet pepper, chopped
- 1-2 tbsp. jalapeno, minced
- 1-2 tbsp. dry or fresh cilantro
Instructions
- Chop up all the fruits and vegetables. Combine and toss in a large bowl. Cover and store in a refrigerator for at least 2 hours.
