Gingerbread Cookies Without Molasses Recipe
Gingerbread cookies, who doesn’t love them? You can’t have a good Christmas without making some delicious home
When I pulled out all the ingredients to make them, I realized I didn’t have molasses. I never have molasses in the cupboard, and when I do, I never use up the entire bottle. So I thought I would come up with a recipe that doesn’t need molasses at all. Molasses was replaced with honey since it has roughly the same viscosity and consistency. And even though they taste different, they are fantastic gingerbread cookies.

This Christmas cookie is a relatively inexpensive cookie for any cookie exchange party. I summed up the cost to be around $4.54 for the entire batch of cookies or $0.19 per cookie. The honey you use will affect the cost greatly. I have calculated this recipe with store-bought honey that is cheap. If you use fresh farm honey, then it may cost much more.

Gingerbread Cookies without Molasses
Ingredients
- 1 stick butter, softened…[$1.00]
- 1 cup dark brown sugar, …[$0.47]
- 1 tsp. vanilla extract, …[$0.70]
- 1 large egg, …[$0.28]
- 1 tbsp. ground ginger, …[$0.33]
- 1 tsp. ground cinnamon, …[$0.04]
- ½ tsp. ground cloves, …[$0.07]
- 3 cups flour, …[$0.69]
- ¼ cup honey, …[$0.96]
Instructions
- Cream together softened butter and brown sugar. Add vanilla and egg then blend together.
- Add all spices and flour and mix together until everything is incorporated. It should look and feel a bit dry for cookie dough.
- Add honey a little drizzle at a time and mix until dough is soft and not sticky.
- Wrap up and put in refrigerator for at least one hour before rolling out and cutting out cookie cut outs.
- Bake cut out cookies at 350 °F for about 8 minutes or until cookies start to brown around the sides.
