Granny May’s Apple Pecan Cake Recipe
Autumn is fantastic for turning on the oven and starting baking and roasting all those wonderful recipes. I love fall, not just for the cooler weather because it is a splendid chance to bake all the recipes I have been dying to make all summer long. My apple pecan cake is just that recipe I love to make. It is perfect for the fall time of year. Apples are ripe on the trees, and pecans fall from our trees.
We have three large old pecan trees which shade our house. Every other October through December, we gather buckets and buckets of fresh pecans from our backyard and a couple of gala apples from our trees, and voila the key ingredients for this apple pecan cake.
My husband doesn’t like a lot of sweet desserts but bakes anything with apples and pecans, and that man is there with a fork and a plate. In fact, I acquired this recipe from my husband’s grade school friend’s grandmother, Ms. Granny May. It is a wonderful cake with a soft middle and a crispy, crunchy outer layer.

Granny Mae’s Apple Pecan Cake
Ingredients
- 2 cup white sugar …[$0.58]
- 1¼ cup vegetable oil …[$0.48]
- 3 large eggs …[$0.72]
- ½ cup orange juice …[$0.20]
- 2 tsp. vanilla extract …[$1.40]
- 3 cups all purpose flour …[$0.69]
- 1 tsp. cinnamon …[$0.04]
- 1 tsp. nutmeg …[$0.37]
- 1 tsp. baking soda …[$0.04]
- ½ tsp. salt …[$0.04]
- 2 cups apples chopped (about 2 medium apples)…[$1.45]
- 1 cup pecans chopped…[$3.24]
Instructions
- Blend all liquid ingredients; oil, eggs, juice, extract, and sugar until blended.
- Add flour, cinnamon, nutmeg, soda, salt, and blend until smooth and completely mixed.
- Fold in chopped apples and pecans.
- Pour into greased Bundt pan and bake on 300 °F for 1 hour 20 minutes or until toothpick comes out clean.
- Remove from oven and let cool completely before cutting into.
