Hawaiian Sweet Potato Casserole Recipe
I love to cook with sweet potatoes when fall rolls around. This Hawaiian sweet potato casserole is a great recipe for such times. Thanksgiving is always a fantastic event to debut this sweet potato side dish.
The Hawaiian variety changes up the classic sweet potato casserole with marshmallows, brown sugar crumble, and pecan topping into something surprising. The side dish casserole also pairs well for an Easter ham dinner. The pineapple variety works well with ham.
Hawaiian casserole is similar to my classic version but with some added delights to spice it up. It is baked with coconut milk, sweet potatoes, and crushed pineapple, then topped with a brown sugar coconut and pecan topping. I have pecans on hand because of our small orchard of trees in our backyard. Macadamia nuts would suit well to and compliment the Hawaiian style more if you can find them.

I calculated this side dish to cost about $7.15 or $0.89 per serving size. The nuts and sweet potatoes make up a majority of the price. As homesteaders, we grow both and can save quite a bit of money. So my homesteader price comes closer to $2.86 or $0.36 per serving size. I love to see

Hawaiian Sweet Potato Casserole
Ingredients
- 2-3 large sweet potatoes, …[$2.67
- 1 cup coconut milk, …[$0.74]
- 1 cup crushed pineapple, …[$0.92]
- ½ cup brown sugar, …[$0.24]
- ¼ cup all purpose flour, …[$0.06]
- ½ stick butter, cold…[$0.50]
- ½ cup macadamia, walnut, or pecan nuts, chopped…[$1.62]
- ½ cup sweetened shredded coconut, …[$0.40]
Instructions
- Peel, wash, and cut up sweet potatoes.
- Place cut potatoes in a greased 8×8 casserole dish and bake at 350 °F for 1 hour.
- In a bowl, combine brown sugar, flour and cold butter together with a fork or you can use your hands like I do until it makes a crumble topping.
- Mix in cut nuts and shredded coconut. Keep in fridge until ready to use.
- When soft add coconut milk and mash until sweet potatoes are an even constancy. You can use an immersion blender.
- Spread crushed pineapples on top of whipped potatoes.
- Sprinkle on brown sugar coconut topping and bake uncovered for 10 minutes more or until topping is bubbly and brown.
