Herbed Chicken Meatball Stroganoff Recipe
I happened to concoct this recipe almost by accident. It was one of my “clean out the pantry and refrigerator” meals. I had pulled out a pound of ground chicken the night before. But of course, didn’t have a dinner plan for said meat. Finding what I did already have on hand, I came up with this delicious herbed chicken meatball stroganoff over tender egg noodles.
It is a simple meal to make, a little easier than the traditional stroganoff meals. The chicken meatballs are whipped together with all the ingredients at one time and then baked. Typically with beef meatballs, it is best to sear meatballs in a skillet on high to give it a crispy crust. This also helps to seal in all the beef juices. Furthermore, I love these meatballs because chicken is a very versatile meat that most any flavorings and herbs go great with them.
My herbed chicken meatball stroganoff is a fantastic family meal. We very rarely have leftovers for lunch the next day. It is a wonderful family dinner, and I think you will enjoy it as well.

Herbed Chicken Meatball Stroganoff
Ingredients
Meatballs
- 1 lb. ground chicken, …[$4.00]
- 1 large egg, …[$0.24]
- 1 cup breadcrumbs, …[$0.29]
- ½ tbsp. onion powder, …[$0.09]
- 1 tsp. paprika, …[$0.18]
- 1 tsp. salt, …[$0.07]
- 2 tsp. dry thyme, …[$0.36]
- 2 tsp. dry parsley, …[$0.30]
- ½ tsp. rosemary, …[$0.10]
- ½ tsp. black pepper, …[$0.46]
Stroganoff Sauce
- ½ stick butter, divided…[$0.50]
- ½ large onion, minced…[$0.50]
- 2 tbsp. dry parsley, …[$0.90]
- 3 tbsp. flour, …[$0.04]
- 1 cup beef broth, …[$0.88]
- ¼ cup heavy cream, …[$0.38]
- ½ cup sour cream, …[$0.38]
- ½ tsp. salt, …[$0.03]
- 1 lb. egg noodles, …[$1.50]
- 3 cups broccoli, or any favorite vegge…[$3.00]
Instructions
Meatballs
- Combine all ingredients together until meat is well mixed.
- Make meatballs about a tablespoon large and place them in an 8×13 casserole dish.
- Bake uncovered in the oven at 375 degrees for 30-40 minutes or until meatballs are cooked through.
Stroganoff
- While meatballs are baking, boil egg noodles accordingly and start the sauce in a large skillet.
- Melt 1 tablespoon of your ½ stick butter and sauté minced onions and dry parsley.
- Add the remaining butter to melt and then add flour. Heat flour on low and cook for a few minutes.
- Slowly whisk in beef broth, heavy cream, and sour cream. Heat on medium to thicken up. Add salt and then toss in cooked chicken meatballs.
- Layer all together and eat hot.
