Jack Daniels Apple Butter Pork Medallions Recipe
I don’t know what makes me gravitate to recipes with Jack Daniels bourbon in them. Personally and by itself, I don’t like the taste of bourbon as a drink, not at all. But man, it sure does kick up a recipe to the next level when I cook with it. And this recipe, Jack Daniels Apple Butter Pork Medallions is just the recipe to try this combination on.
Don’t worry if you don’t like pork or don’t have a tenderloin on hand for this recipe. This goes great with chicken or pork chops and you cook it the same way. As I write this, I wonder if it will go good with a smoked ham…mmmm, must try that one out.

Jack Daniels Apple Butter Pork Medallions
Ingredients
- 2 tbsp. butter, …[$0.25]
- 3 large carrots, sliced…[$0.30]
- 1 large onion or leek, chopped…[$0.30]
- 2 lb. pork tenderloin, …[$2.58]
- ¾ cup Jack Daniels bourbon, …[$5.99]
- 1 cup chicken broth, …[$0.35]
- 1 cup apple butter, …[$1.28]
Instructions
- In a large skillet, melt butter and sauté carrots and onions for a couple of minutes over medium heat.
- Move vegetables to the side of pan and sear pork tenderloin. I like to cut the tenderloin in half so it fits in the pan easier. Sear on all four sides for about 3-5 minutes each or until meat has a nice cooked, brown color.
- While the pork is searing, preheat oven to 325 °F.
- Place seared pork and vegetables in a 8×8 casserole dish, cover, and bake for about 30-45 minutes.
- While everything is baking reduce heat to low medium and add Jack Daniels bourbon to pan. Let alcohol cook off for about 5 minutes.
- Next add chicken stock and apple butter. Mix and let cook for 30 minutes.
- Slice the pork tenderloin in ½ inch pieces and top with apple butter sauce and enjoy.
