In a large skillet, melt butter and sauté carrots and onions for a couple of minutes over medium heat.
Move vegetables to the side of pan and sear pork tenderloin. I like to cut the tenderloin in half so it fits in the pan easier. Sear on all four sides for about 3-5 minutes each or until meat has a nice cooked, brown color.
While the pork is searing, preheat oven to 325 °F.
Place seared pork and vegetables in a 8x8 casserole dish, cover, and bake for about 30-45 minutes.
While everything is baking reduce heat to low medium and add Jack Daniels bourbon to pan. Let alcohol cook off for about 5 minutes.
Next add chicken stock and apple butter. Mix and let cook for 30 minutes.
Slice the pork tenderloin in ½ inch pieces and top with apple butter sauce and enjoy.
