Sweet Potato Mash with Maple Glazed Grilled Chicken Tenders Recipe
It was 4 pm on a Monday, and the kids were asking about dinner. That is always a good indication of them becoming starving in the next thirty minutes. The husband was also on his way home from work within the next hour. So it was a good time to make this
I had three chicken breasts in the fridge and no idea what to do with an odd number. Then I saw maple syrup sitting on the counter from breakfast and a few sweet potatoes. I grilled chicken breast which was cut into thick strips and stewed a sweet glaze made of maple syrup and brown sugar. All goes wonderfully over buttery sweet potato mash.

I calculated this dinner entree and side dish to cost around $12.90 or $3.23 per serving size. As a homesteader, I can save a little money on this lovely recipe by growing sweet potatoes and making all my own spices. My reduce price is closer to $9.45 or $2.36 per serving size.

Maple Glazed Grilled Chicken Tenders & Sweet Potato Mash

Chicken Tenders
- 4 large chicken breasts, …[$4.00]
- 2 tbsp. garlic powder, …[$0.32]
- 2 tbsp. onion powder, …[$0.36]
- 2 tbsp. chipotle chili powder, …[$0.96]
- 1 tbsp. paprika powder, …[$0.54]
- 1 tbsp. salt, …[$0.21]
- ½ tbsp. black pepper, …[$1.86]
- 3 tbsp. vegetable or olive oil, …[$0.06]
- ¼ cup maple syrup, …[$1.12]
Sweet Potato Mash
- 3 large sweet potatoes, …[$2.23]
- 1 stick butter, …[$1.00]
- ¼ cup brown sugar, …[$0.12]
- 1 tbsp. cinnamon, …[$0.12]
Instructions
Chicken Tenders
- Sliced each breast lengthwise into three tenders and sprinkle all tenders with seasonings. Add a bit more chili powder for more of a kick against the sweet maple glaze.
- Heat up oil in a skillet and pan sear chicken tenders on non-seasoned side first on medium heat for about 5-7 minutes. Then flip chicken over on the seasoned side for another 5 minutes.
- Lower heat to low medium and add maple syrup over chicken. Let simmer and turn into sauce.
Sweet Potato Mash
- Peel, cut, and boil sweet potatoes in a large pot until all pieces are soft.
- In a large bowl add butter, brown sugar, and cinnamon. Then mash hot cooked sweet potatoes into bowl until evenly mixed.
- Plate chicken tenders on top of sweet potatoes and spoon maple sauce over everything that was made from the pan and enjoy!
