Orange Maple Roasted Pork Tenderloin Recipe

My orange maple roasted pork tenderloin was made by me, almost by accident. One night I was scrambling around, trying to figure out what to make for dinner. In the fridge, I had a large pork tenderloin thawed from the night before. I didn’t know how to prepare it. I opened my trusty 2006 Cooking Light cookbook and found this great little recipe.
The original cookbook recipe is a little different than how I prepared it down below. I changed it because I didn’t have all the recipe’s ingredients on hand but enough to make it similar. I used four tablespoons of orange marmalade in place of 1/4 cup of orange juice and two tablespoons of water as a substitute for the sake or rice wine.
But all in all, it was a family hit. I couldn’t believe I roasted whole carrots with a pork tenderloin along with white potatoes, and my children gobbled it up. The sweet maple and orange flavors gave a fantastic taste to the soft carrots and pork. The flavoring was not overpowering so you can taste the flavor of the meat.

As I update my recipes, I like to adjust for certain lifestyle and dietary changes that I or my family need to go through. For this recipe, substitute the white potatoes for broccoli and use sugar free orange marmalade and sugar free maple syrup.

Orange Maple Roasted Pork Tenderloin
Ingredients
- 4 tbsp. orange marmalade, …[$0.24]
- ½ cup maple syrup, …[$2.24]
- 3 tbsp. soy sauce, …[$0.24]
- 3 tbsp. water, …[$0]
- 1 tbsp. onion powder, …[$0.18]
- 1 tbsp. garlic powder, …[$0.16]
- ⅓ cup chicken broth, …[$0.12]
- 2 lb. pork tenderloin, …[$5.00]
- 3 large carrots, …[$0.12]
- 6 medium potatoes, …[$0.45]
Instructions
- Combine everything in a medium size bowl except pork tenderloin, chicken stock, and root vegetables. Mix until uniform.
- In a roasting pan, place trimmed pork tenderloin in and top with half of orange maple sauce. Save the other half in fridge for later.
- Cover pork tenderloin and set in fridge for at least 2 hours.
- When ready to cook, take marinated pork out and sear over medium high heat in a large skillet. Sear on all sides until golden brown. This will keep the juices in when roasting. Cut tenderloin in half if it does not fit in skillet.
- Return seared pork to roasting pan and add chicken or pork stock and top the pork with the remaining orange maple sauce.
- Add your cleaned and cut root vegetables to the side of the pork.
- Cover and put in oven at 400 °F for one hour.
