Overnight Yeast Waffles Recipe
Overnight yeast waffles are fantastically unique and delightful. My husband is absolutely in love with these breakfast entrée. These waffles seem to come out of my tried and true Oster Belgian Waffle Maker much crispier than the regular waffle batter. That is what my husband loves so much.
The batter is made the night before and set up in a warm place on the counter. This will activate the yeast to grow the batter to double or even might triple the batter. Make sure you keep the batter in a large bowl or container. The batter will rise quite a bit. The first time I made this, it rose so much that it spilled over the sides and went all over the countertop. It was such a mess. Don’t let it happen to you.
Lastly, I double or triple this batter recipe when I do make this for the family breakfast. The excess made waffles can easily be frozen individually and then stored in a resealable bag or container. Later you can take out each waffle and place them in a toaster oven to reheat and enjoy. They make a great and fast breakfast for the kiddos before school.

As the cost of waffles go, these are good and inexpensive. I have calculated the entire batter around $5.44 or about $0.36 per waffle. I personally can’t reduce the cost of these waffles any further.

The Night Before
- Combine warm water, sugar and dry yeast in a large bowl. Mix together and let sit for 5-10 minutes.
- Blend in remaining ingredients with a large spoon. Make sure you pour in melted butter slowly and at the end of batter mixture. Cover and set out on counter until morning for about 8 hours.
The Morning of
- Fold eggs into batter. Pour the appropriate amounts into a well greased waffle maker and cook accordingly until golden brown and crispy.
- Serve waffles immediately with your favorite syrup or freeze individual waffles on a cookie sheet then store in a resealable plastic bag to have for later. Pop them in a toaster oven or microwave to reheat.
