Peach Pie with Brown Sugar and Coconut Streusel Topping
I had meant to use my homemade canned peach pie filling I made a few months back. Those beautiful bright peach-colored jars were staring at me and daring me to use it in a new recipe. I had been trying to lose the rest of the baby weight, and staying away from sweets was my goal. Well, the goal failed when I made this peach pie topped with brown sugar and a coconut streusel topping from my trusty Cooking Light cookbook.
The original recipe called for a few things that I ended up changing. Fresh peaches, but I changed it with ingredients I had in the pantry. I added the brown sugar in the streusel instead of putting it in the pie filling and increased the amount of streusel.
This pie is a great peach pie variation. The sweet coconut oat topping is a wonderful taste and brightens up a plain pie filling and crust.

I calculated this pie recipe to be around $7.21 or $0.90 per serving slice. The peach filling makes up the bulk of the cost on this dessert. As homesteaders if you can your filling then the price will go down, especially if you grow the peaches too.

Peach Pie with Brown Sugar Coconut Streusel Topping
Ingredients

Pie Crust
- 1¼ cup all purpose flour, …[$0.29]
- 1 Tbsp. white granulated sugar, …[$0.02]
- ¼ tsp. salt, …[$0.02]
- 1 stick butter, cold…[$1.00]
- 3 Tbsp. water, …[$0]
Streusel Topping
- 1 cup quick oats, …[$0.28]
- 1 cup sweetened shredded coconut, …[$0.41]
- ¼ cup brown sugar, …[$0.12]
- 6 Tbsp. butter, melted…[$0.75]
Instructions
Pie Crust
- Mix together flour, sugar, and salt.
- With hands, blend butter into flour mixture until it becomes combined. Add water and blend with hands until texture is smooth.
- Roll out immediately and set in baking pie dish.
- With a fork poke holes into bottom of dough to release air when baked and set aside.
Streusel Topping
- Melt butter in a bowl and add oats, coconut, and sugar. Mix together and set aside.
Make Pie
- Pour pie filling into pie crust. Using a pie shield, bake at 350 °F for 30 minutes.
- Top pie with streusel topping and bake for another 30 minutes or until topping is golden brown but not burned.
- Remove from oven and let cool completely before cutting into.
