Pina Colada Fruit Leather Recipe
Making Pina colada fruit leather is a fantastic way to use an entire pineapple. Pureeing a can of Pina colada mix into the fresh pineapple is an easy way to get a perfect Pina colada flavor without all the extra ingredients. The can of concentrated drink mix gives the coconut flavor and the appropriate sugar content without adding more. The added shredded coconut is not necessary, but it is visually pleasing against the bright yellow-orange color of the fruit leather.

Instructions
- Blend concentrate and cut up pineapple together until smooth with no lumps.
- Pour into greased sheets for either the oven or dehydrator. Sprinkle shredded coconut with your hands.
- Heat at 135 °F for 6-8 hours or until leather is soft and pliable but not sticky. Cool completely and store in an air tight container.
