Meatloaf Mashed Potatoes Recipe with Tangy Barbecue Sauce
By far one of the best meatloaf dinner entrees I have made in my kitchen. My entire family loved this meatloaf mashed potatoes dish topped with a homemade tangy barbecue sauce. But don’t get me wrong, I love all my other ones like my Italian meatloaf, barbecue turkey and sweet potato meatloaf, and my classic loaf with a sweet tomato soup gravy.
Going from the bottom up, you start with a warm slice of garlic bread. Next top it with a delicious and flavorful piece of beef and pork meatloaf. Following that with a large scoop of mashed potatoes slammed full of flavorful chives. And finally, finish the entree off with a good drizzle of a homemade tangy barbecue sauce.
The main part of this dish is the meatloaf, which is made with a combination of ground beef and pork. First, you have the basic meatloaf ingredients like breadcrumbs, eggs, dairy, and seasonings. What differentiated from other meatloaves for me was the cooking method. I had never done before but may keep doing in my other meatloaves.
Usually, I push the ground meat into a loaf pan, and baked it in an oven at 350-375 degrees F. But with some research and I found a new method by baking it in a water bath and at lower oven temperature.
What I did find using this method was that there was much less shrinkage of the meatloaf in the pan when it was finished baking. There was a lot of liquid fats and juices in the pan but the meatloaf itself did not pull away from the sides of the pan like it normally does.
Cost to make this recipe.
I have calculated this entire recipe costing roughly $23.37. The meatloaf serves a good eight large slices, so I have turned this recipe into an eight serving entrée plus a veggie side. Thus, the cost per serving is about $2.92.
Unfortunately for us as homesteaders, the majority of the ingredients needs to be purchased at a store. Eggs, garlic, and onions are the only things that are made and raised here but don’t reduce the cost a whole lot.

Instructions
Tangy BBQ Sauce
- Place all ingredients barbecue sauce ingredients in a large pot and bring to a low boil. Stir often and let barbecue sauce simmer for about 30 minutes. Take of heat and let cool for later.
Meatloaf
- Blend all meatloaf ingredients together and press meatloaf mixture in a bread loaf pan.
- Preheat oven to 325 °F. Cover meatloaf with aluminum foil. Place meatloaf pan in another larger casserole dish. Fill the larger casserole dish with about 1 inch of water around the meatloaf.
- Bake covered meatloaf for in water for 45 minutes then remove from oven and uncover. Bake meatloaf uncovered for another 45 minutes.
Mashed Potatoes
- While meatloaf is baking, peel and wash potatoes. Cut potatoes in large pieces to boil faster.
- Place potatoes in large pot of water and bring to a boil. Drain water when potatoes are soft. Mash potatoes with stick of butter, cream, heavy, and chives.
Plate the dish
- Fifteen before serving, broil or bake garlic bread slices. Top baked bread with a hot slice of meatloaf then a large scoop of mashed potatoes and drizzled with barbecue sauce.
