Strawberry Shortcake Baked French Toast Breakfast Casserole Recipe
It’s a classic, Strawberry Shortcake. Who doesn’t love the buttery shortbread topped with strawberries and whipping cream? Well, okay maybe some people don’t like it but this girl loves it. I love it so much I wanted to eat it for breakfast so I turned it into a baked French toast breakfast dish.
Just like the previous baked French toast casseroles I have posted; blueberry oatmeal strudel, my original baked french toast, and pumpkin pie which are just to name a few, the basic concept is the same. You have a French bread, egg-milk base with the added strawberries, sweet cream filling, and a shortbread crumble topping.
For an added tasty treat, top this dish with fresh strawberry syrup and real whipping cream.

Strawberry Shortcake Baked French Toast
Ingredients
- 1 loaf French bread, cut up…[$1.00]
- 8 oz. cream cheese, softened…[$2.00]
- 1 cup powdered sugar, …[$0.34]
- 1/2 tsp. vanilla extract, …[$0.35]
- 2 cup strawberries, fresh or frozen…[$2.50]
- 6 large eggs, …[$1.38]
- 1½ cup half & half, …[$0.75]
- ½ cup white granulated sugar, …[$0.15]
- ½ stick butter, melted…[$0.50]
- 1 cup crushed shortbread cookies or graham crackers, …[$1.50]
- 1 cup all purpose flour, …[$0.23]
Instructions
- Grease a 8×8 casserole dish and put ⅓ of tore up bread on bottom.
- Soften cream cheese in bowl, add powdered sugar and vanilla. Blend until smooth. Spread ⅓ of cream cheese mixture over first layer of bread.
- Cut up strawberries and put down a handful. If working with frozen strawberries, cut when they are slightly frozen still.
- Add another layer of bread, cream cheese, strawberries for two more layers.
- In a large bowl, blend eggs, half & half, and sugar. Pour over bread and strawberry dish. Pour slowly, the egg mixture will spill out if you go too fast.
- In another large bowl, melt butter and add cookie crumbs and flour. Mix until crumbly.
- With your hands, crumble cookie mixture on top of the French toast, cover and put in refrigerator.
- In the morning, preheat oven to 350 °F and bake covered French toast for 1 hr.
- To get a golden crust, broil on high for a few minutes. Don’t take you eyes off of it.
- Let dish sit for 5 minutes, cut and serve.
