Red Beans and Rice
Ingredients
- 4 cups dry red kidney beans, …[$0.96]

- 1 pkg Andouille sausage, chopped…[$3.50]
- 1 cup peas, …[$0.50]
- 1 cup carrots, minced…[$0.25]
- 6 cloves garlic, minced…[$0.60]

Instructions
- In a large bowl add red beans and enough water to cover beans about 2-3 inches over. Let beans set overnight to soak.
- The next day pour soaked beans in a pot along with water and bring to a boil for about 10 minutes to soften the beans further.
- Next add pre-boiled beans and all remaining ingredients to slow cooker plus enough water cover one inch over all the food. Set slow cooker to low and cook for 8 hours.
- 30 minutes before ready to eat, rinse rice over running water until water runs clear. Cook rinsed rice in a large pot with 4 cups of water over low heat and covered pot.
- Mash the red beans mixture a couple of times and stir. Serve all pieces of the meal in a bowl together and enjoy.
