Delicious and traditional Cajun Red Beans and Rice slow cooked with Andouille sausage, red kidney beans, some veggies, and Cajun spices served over white rice.
In a large bowl add red beans and enough water to cover beans about 2-3 inches over. Let beans set overnight to soak.
The next day pour soaked beans in a pot along with water and bring to a boil for about 10 minutes to soften the beans further.
Next add pre-boiled beans and all remaining ingredients to slow cooker plus enough water cover one inch over all the food. Set slow cooker to low and cook for 8 hours.
30 minutes before ready to eat, rinse rice over running water until water runs clear. Cook rinsed rice in a large pot with 4 cups of water over low heat and covered pot.
Mash the red beans mixture a couple of times and stir. Serve all pieces of the meal in a bowl together and enjoy.
