Bean and Beef Burrito Slow Cooker Recipe
Oh boy, this post gives you three recipes in one. Homemade tortilla shells topped with flavorful slow cooked refried beans, spicy slow cooked shredded beef with cool clean , cheese, lettuce, tomatoes, and sour cream. And since everything is in slow cookers, you will have time to make the tortilla shells or take some out of the freezer, thaw, cook and enjoy.

Ingredients
Refried Beans
- 3 cups dry pinto beans, ...[$0.72]
- 2 cups water, ...[$0]
- 2 tbsp. onion, minced...[$0.10]
- 2 tsp. black pepper, ...[$0.92]
- 2 tbsp. garlic, minced...[$0.20]
- 4 tsp. cumin, ...[$0.68]
Beef
- 3 lb. London broil , ...[$9.45]
- 3 oz green chilies, minced...[$1.48]
- 4 tbsp. Taco seasoning, ...[$2.04]
- 1 large onion, chopped...[$0.50]
- 1 tbsp. white vinegar, ...[$0.02]
- 8 large flour tortillas, ...[$1.44]
Instructions
Refried Beans
- The night before, soak beans overnight in a large pot of water.
- Rinse beans and place in slow cooker. Add water, garlic, onion, cumin, and pepper. Cook on high for 5 hours.
- Using an immersion blender, puree beans until smooth. Cook for another 3 hours.
- If beans are too dense, add ½ cup water when needed.
Beef
- Place beef in slow cooker and top with rest of ingredients; chilies, seasonings, onion, and vinegar.
- Cook on low for 6 hours.
- Shred beef and mix ingredients together if needed. Cook on low for another 2 hours.
- Make tortillas and top with beans, beef, cheese and any favorite fixings.
