Slow Cooker Pork Chops Recipe with Balsamic Blueberry Sauce
This is a great recipe for any season of the year. Using fresh or frozen blueberries makes no difference in this recipe because either way, it is amazing. I do have to add that using frozen blueberries will help to keep their shape longer while cooking.
If you do have fresh blueberries then you can easily freeze them for the sauce. Simply wash and place the whole berries on a cookie or baking sheet and put in the freezer. Take the berries out of the freezer when you are ready to use them.
I find that the tangy balsamic vinegar compliments the sweet blueberries perfectly. It gives the entire dish a unique and distinctive taste. My entire family loved this meal for dinner and it was very fast to make which makes it a great gourmet dinner for those busy work and school evenings.

Instructions
Slow Cooker Pork
- Prepare pork chops or pork tenderloin with rosemary, salt, and pepper.
- Put pork into greased slow cooker. Cook for about 4 hours for pork chops and 6 hours for pork tenderloin.
Balsamic Blueberries
- When pork has finished cooking, prepare sauce by adding all ingredients except for blueberries to a small sauce pot.
- Bring sauce to a boil and stir often until thicken. May take a few minutes.
- Reduce heat and add blueberries. Cook for another few minutes until blueberries heat up.
- Serve over cooked pork.
