
Sweet Mustard Corned Beef Brisket and Cabbage Recipe
Corned beef and cabbage is one of my most favorite meals. It is cherished not just for its hearty flavors. It also brings tradition to the table. This recipe is easy to cook in either a slow cooker or pressure cooker. It is a complete meal with two sides all cooked together. This makes it perfect for family gatherings or cozy nights at home. The savory aroma that fills the kitchen as the ingredients simmer is simply irresistible, inviting everyone to gather around. I particularly love to cook this recipe in my Instant Pot. It speeds up the cooking process and locks in moisture and flavor. This results in tender, juicy meat. The meat pairs beautifully with the soft, flavorful cabbage and potatoes. Sharing this meal with friends and family always brings back wonderful memories. It becomes a cherished ritual, warming both the heart and the belly.
Corned beef is the star of the dish. It usually comes packaged in a red brine solution. This brine gives it that classic salty, savory flavor. However, if left on the meat, the brine can sometimes make it a bit too salty for my taste. To balance it perfectly, I always rinse the meat under cold water. Then I place it in the cooker. This process lets the flavors shine without overwhelming the palate. The cabbage occupies a generous portion of the sides. It softens beautifully after 6–8 hours of gentle cooking and steams to tender perfection. For those who enjoy a richer touch, dot the cabbage with a few tablespoons of butter before cooking. Try adding it when serving. Let it melt over the warm, green leaves for a silky, flavorful finish. This elevates the dish to something truly comforting and satisfying.

Cost to make this recipe.
The beef is the chief ingredient and unfortunately costs the most. With everything store-bought, I calculated this recipe to be under $20 or over $3 per serving. As a homesteader with a garden, I can lower the cost by growing onions, potatoes, and green cabbage. It isn’t much of a savings but it is something and every little bit helps, doesn’t it?

Sweet Mustard Corned Beef and Cabbage
Ingredients
- ½ large sweet onion cubed…[$0.25]
- 3 lb corned beef brisket …[$16.50]
- 1 cups water …[$0]
- 1 cup brown sugar divided…[$0.47]
- 2 Tbsp wholegrain mustard …[$0.24]
- 1 tsp salt …[$0.07]
- ½ tsp black pepper …[$0.46]
- 1 whole green cabbage …[$1.38]
- 6 medium red potatoes …[$0.60]
Instructions
- Cut all the onion into large pieces and place at bottom of slow cooker along with water and ½ cup brown sugar.
- Remove corned beef from package and rinse briefly under cold water. I like to rinse some of the brine off because I find it too salty for my tastes. You don’t have to do this part.
- Place beef in slow cooker with the fatty side down. Don’t trim the fat, it gives more flavor to the sauce.
- In a bowl mix remaining brown sugar, mustard, salt & pepper together. Smear mixture over entire corned beef.
- Wash and quarter the red potatoes and place on the sides of the slow cooker bowl.
- Cut up the entire green cabbage into large pieces and put on top of beef and potatoes in slow cooker.
- For the slow cooker, set to low and let cook for 8 hours or until the beef becomes soft.
- For pressure cooker, add 1 more cup of water and set to high for 30 minutes.

Instructions

- Wash and quarter the 6 medium red potatoes and place on the sides of the slow cooker bowl around the seasoned corned beef.
- Cut 1 whole green cabbage into large pieces and put on top of beef and potatoes in slow cooker.
- For the slow cooker, set to low and let cook for 8 hours or until the beef becomes soft.
- For pressure cooker, add 1 more cup of water and set to high for 30 minutes.
