Smokey Turkey Burrito with Chipotle Sour Cream Sauce Recipe
Here is yet another fantastic recipe that works great for the days after Thanksgiving. My smokey turkey burrito with chipotle sour cream sauce incorporates typical leftovers from the holiday season—items like corn, onions, sour cream, and of course, turkey. Adding a Tex-Mex flare in the form of a burrito takes away the feeling of eating leftovers for the fifth day in a row.
At this homestead, I don’t always have turkey just for Thanksgiving. Some random wintry weekends, when it is great to have the oven going, I will pop in a turkey for a small feast. I can do this quite cheaply. When the Thanksgiving holiday comes around, our grocery store has some phenomenal whole turkey sales. Sour Cream Sauce
- 3 tbsp. butter, …[$0.38]

Instructions
Burrito
- Sauté onions, green peppers, and corn in olive oil for about 5-7 minutes or until cooked and soft.
- Add remaining ingredients for burritos, cover, and heat over low to medium heat. Stir often.
Sour Cream Sauce
- Melt butter and whisk in flour until mixture is thick.
- Add stock, chipotle pepper, and seasonings and whisk until blended. Heat until mixture thickens.
- Add cheese and sour cream and cook for another 10 minutes or until keep heated until ready to use.
- Stuff tortillas and roll up. Cover with sauce and top with cilantro and fixings.
