Instructions
Burrito
Sauté onions, green peppers, and corn in olive oil for about 5-7 minutes or until cooked and soft.
Add remaining ingredients for burritos, cover, and heat over low to medium heat. Stir often.
Sour Cream Sauce
Melt butter and whisk in flour until mixture is thick.
Add stock, chipotle pepper, and seasonings and whisk until blended. Heat until mixture thickens.
Add cheese and sour cream and cook for another 10 minutes or until keep heated until ready to use.
Stuff tortillas and roll up. Cover with sauce and top with cilantro and fixings.
