Strawberries and Cream Coffee Cake Recipe
Do you have your favorite pie filling in the cabinet and the basic baking ingredients? I always do. My pantry is filled with great home preserved pie filling so I can make all sorts of yummy treats like this pie filling coffee cake. My basic pie fillings I make are strawberry, peach, and of course apple pie filling. If you do too, then you can make this basic and yummy coffee cake.
There is no rolling and rising of dough. It is as easy as baking a cake. Plus, if you have pie filling on hand then the filling is already done for you. There is no special coffee cake filling to cook up. You can easily use a store bought can pie filling if you don’t have home preserved varieties on hand. Oh and did I say it was fast and easy? Well it is!
You get all the real sweetness from the pie filling which compliments the basic coffee cake batter quite well. I had some leftover strawberry homemade pie filling from a previous recipe, which worked out well when coming up with this recipe.
I love making this recipe when we have house guests over. It is an easy breakfast to even make the day before and set out for everyone to help themselves.

Strawberry & Cream Pie Filling Coffee Cake
Ingredients
- 1½ cups all purpose flour, …[$0.35]
- 2 large eggs, …[$0.46]
- 2 cups sour cream, …[$1.52]
- ½ cup white granulated sugar, …[$0.15]
- ½ stick butter, softened…[$0.50]
- 1 tsp. vanilla extract, …[$0.70]
- ½ tsp. baking powder, …[$0.02]
- ½ tsp. baking soda, …[$0.02]
- 1 cup strawberry pie filling, or any favorite flavor…[$2.88]
- 3 tbsp. powdered sugar, …[$0.06]
- 1½ tbsp. heavy cream, …[$0.11]
Instructions
- Grease an 8 inch springform pan with parchment.
- Beat all ingredients until smooth except for pie filling, powdered sugar, and heavy cream.
- Pour half the cake mixture in greased pan. Spread pie filling on top of cake mixture. Top with the remaining cake mixture.
- Bake at 350 °F for 40 minutes.
- Take out of oven when finished and let sit in pan until cool.
- Whisk powdered sugar and heavy cream until desired consistency. Drizzle over top of cooled coffee cake. Slice and enjoy.
