Summer Garden Vegetable Fried Fritter Recipe

The summer vegetable fritters are versatile as they can be made for appetizers, side dishes, or make as larger fritters for entrees. There are also numerous amount of dipping sauces that are tasty with this recipe. I love Dijon tartar sauce, homemade buttermilk ranch, and numerous amount of honey mustards. Sweet chili sauce, remoulade, or jalapeno yogurt sauce are also great additions to these fried veggie cakes

Summer Garden Fritters
Ingredients
- 1/2 cup zucchini, shredded…[$0.45]
- 1/2 cup yellow squash, shredded…[$0.45]
- 1/4 cup corn, …[$0.35]
- 1/4 cup onion, minced…[$0.25]
- 1 large egg, …[$0.23]
- 1 cup bread crumbs, …[$0.29]
- 2 tsp. garlic powder, …[$0.10]
- 1 tsp. salt, …[$0.07]
Instructions
- Combine all ingredients in a large bowl.
- Form patties with your hands. Place on a cookie sheet and put in the fridge.
- Heat up a fryer or pan of oil.
- Place chilled patties in the oil with a slotted spoon and fry for about 3 minutes on each side or until all sides are golden brown.
- Take out of oil and lay on a paper towel to remove the oil.
- Serve plain or with your favorite sauce. Any sauce goes with these fritters.
