Sweet Potato Black Bean Burger Recipe with Southwestern Coleslaw
I know it doesn’t look like much from the picture above, but it is such a tasty meal. This recipe will prove to you that you don’t need a meat derivative to have a great sandwich or burger. A sweet potato black bean combination makes a great substitute for any time of the day.
The sweet potatoes and black beans both have a huge amount of protein and fiber that keeps you full just as well as beef or chicken would. But it is a great reduction of calories from the typical meat burger.
This combination also goes so well with a taco or burrito flavoring. I got the idea from my Sweet Potato and Black Bean Burrito recipe that tastes amazing. The cumin and onion powder gives a power punch of Mexican flavors that works well with sweet potato and black beans. Topping the burger with a southwestern flavored coleslaw also helps that flavor go to the hilt.

As burgers go, meatless ones are way cheaper than their counterpart. I added this little number up, and it only costs $5.97 for eight burgers, buns, and slaw. That’s right, less than $0.75 per burger.
These are filling burger patties, so I have stretched the recipe out to make eight burgers, but if you want to make larger then it is definitely possible and will change the price slightly per patty.

Sweet Potato and Black Bean Burger with SW Slaw
Ingredients
Burger
- 1½ cup mashed sweet potatoes, …[$0.50]
- ½ cup dry black beans, …[$0.45]
- ½ cup breadcrumbs, …[$0.15]
- 2 tsp. cumin, …[$0.34]
- 2 tsp. onion powder, …[$0.12]
- 1 tsp. paprika, …[$0.18]
- 1 tsp. salt, …[$0.04]
Coleslaw
- 1 cup mayo, …[$0.96]
- 1 head green cabbage, shredded or chopped…[$0.65]
- 1 large carrot, shredded…[$0.10]
- 1 tsp. cumin powder, …[$0.17]
- ½ tsp. onion powder, …[$0.03]
- ½ tsp. cayenne or chipotle powder, …[$0.10]
- 8 hamburger buns, …[$2.18]
Instructions
Burger
- Use either 1½ cup precooked mashed sweet potatoes from another recipe or cook new by boiling peeled sweet potato pieces until soft and whipping them until all the lumps are gone.
- Boil dry black beans in lots of water until all the beans are soft.
- In a bowl of whipped sweet potatoes add cumin, onion powder, paprika, salt and pepper.
- Fold in cooked black beans. Be sure not to break up the beans to much.
- Form 6 patties in your hand. If the mixture is too wet to form, then add a little bit more breadcrumbs.
- Bake patties on a cookie sheet at 375 °F for 17 minutes then flip patties over and bake for another 17 minutes on the other side.
Coleslaw
- Shred cabbage and raw carrots.
- In a bowl, mix mayo with all the seasonings. Fold cut veggies with mayo mixture and put into refrigerator for at least 4 hours.
- Serve over burger and enjoy.
