Healthy eating and lifestyle have become a major factor with our family. Not only do we have two growing children but we as parents are not getting any younger. And with that age comes health problems rearing its little ugly head around each and every corner. As in recently the husband who at the time of this post is not yet 40 has been suffering and dealing with gout. Yup, gout. You know, the autoimmune problem that most think 80-year-olds have. Well, my friends, middle-agers can get it too and boy does it hurt my husband when he flares up.
And so the hunt for a healthier lifestyle began. Now I will not lie, it is a slow change because let’s face it if it was too abrupt, it really won’t work. I had and still have to find flavorful foods that not only contain superfoods but limit salt, red meat, shellfish, yeast breads, and alcohol.
My Sweet Potato and Black Bean recipe does all that and more since I have given it a great kick of Mexican flavors. Plus, both the sweet potatoes and black beans are such great staple ingredients and go with nearly anything, the recipe can be mixed and matched with many additions.
First of all, low carb-ing this meal is easy to forego the soft flour tortillas and make a burrito bowl. With a burrito bowl, adding fresh lettuce, tomatoes, shredded cheese, and sour cream is absolutely perfect. Add-ons also work really well. I like to add my newest favorites from Old El Paso like their Creamy Queso Sauce, Zesty Ranch Sauce, Creamy Salsa Verde Sauce, and Mild Taco Sauce.

So I gave you the yummy reasons to make this recipe but how about the fiscal ones. Yeah, this recipe cost me roughly $6.15 for 5-6 servings or $1.03 per serving. And the sweet potatoes can be even cheaper when you buy them around Thanksgiving when they are nearly half the cost per pound.

Ingredients
- ½ cup dry black beans, …[$0.45]

Instructions
- Hours before, put dry beans in large bowl of boiling water and let sit covered. After a few hours, bring more water to a boil in a pot and cook for about 20 minutes.
- Rinse wild rice under cold water until water runs clear. Place in a separate pot and add vegetable broth and spices. Stir, cover, and cook over low-medium heat until rice is soft but not mushy.
- Now sauté potatoes, garlic, peppers, onion, and corn on medium heat for about 10 minutes or until sweet potatoes are soft.
- Fill tortillas with mixture and favorite fixings and enjoy.
