Sweet Potato and Carrot Coconut Thai Soup Recipe
Who here loves Thai cuisin as much as I do? Love , love, just love red curry coconut food. So when I came across this recipe from Wanderlust Kitchen food blog I just had to try it and I am glad I did. This sweet potato and carrot coconut Thia soup is delicious.
My husband is not a huge fan of Thai food so I had to keep the details of the ingredietns a secret when I first made this soup. As I had a broken wrist whne I made this recipe, the husband had to chop all the veggies for the meal prep. So though meal prep I had a hard time dodging questions from the curious husband.
He was concerned about the combination of veggies he was chopping. His concern was put to rest when he ate the soup for dinner. The entire family loved this soup. In fact, my two year old could not get enough of it.
This recipe is easy and can be put in the slow cooker or pressure cooker. It also make sa large portion so you can make this for a group of people or save the leftovers for a good lunch the next day. This soup also makes a great base to add more meat, seafood, veggies, and/or rice for a hearlier dinner idea.

Sweet Potato & Carrot Coconut Thai Soup
Ingredients
- 1 quart chicken or vegetable stock, …[$1.40]
- 1 large sweet potato, cubed…[$0.45]
- 1 medium sweet onion, chopped…[$0.35]
- 1 lb. carrots, sliced…[$0.45]
- 2 cans coconut milk, …[$3.22]
- 2 tbsp. red Thai curry paste, …[$0.55]
- 2 tbsp. brown sugar, …[$0.06]
- 1 tsp. salt, …[$0.04]
Instructions
- Combine all ingredients. Set slow cooker to low and cook for 6 hours.
- Puree soup with an immersion blender. Add any optional ingredients like shrimp and cook for another 30 minutes.
- Serve and enjoy!
