Sweet and Spicy Salsa Chicken and Rice Recipe
My sweet and spicy salsa chicken with rice is one of my favorite dinners I make for the family. The recipe is super quick to put together. All you need to do is pour salsa and brown sugar on top of trimmed chicken breast and bake.
It is flavorful, dependent on the salsa you use. The tomatoes and peppers pack a nice punch. The hotter the salsa, the more brown sugar you will need to counteract the spicy peppers. There is something to me about the sweet sugar and salsa spice together that makes a meal so delicious.
Make sure you test the salsa and brown sugar combination before pouring it on the raw chicken. But remember that as you heat up the salsa, it will become spicier also.
There are some meals when I use a milder salsa because of either daughter that starts to hate spicy food. I typically use a mild or medium salsa with only 1/2 cup of brown sugar.

Sweet & Spicy Salsa Chicken
Ingredients
- 1 cup dry rice, …[$0.25]
- 4 large chicken breasts, trimmed…[$4.00]
- 2 cups hot salsa, …[$1.60]
- 1 cup brown sugar, …[$0.47]
- 1 cup fresh mushrooms, sliced…[$0.78]
- 1 cup corn, …[$0.45]
Instructions
- Cook rice accordingly with a 1:2 rice to water ratio.
- In a bowl, mix salsa, brown sugar, mushrooms, and corn together. Trim any fat off the chicken breast.
- In a casserole dish lay out chicken breasts and pour salsa mixture on top.
- Bake in oven at 350 °F for 30 minutes uncovered. Serve hot over rice or noodles
