Tropical Carrot Bread Recipe
I had come up with this recipe when I needed to use up a few ingredients from my pantry. This is one of those great recipes that I love to make because it uses the left over ingredients I have in the fridge and pantry that I wouldn’t other wise use. These ingredients were going to go bad if I didn’t eat them up soon, and thus, my tropical carrot bread came alive.
My kitchen had a few browning bananas; a half can of pineapples in the fridge, freshly picked carrots, and an opened box of raisins. Banana bread was almost certainly the way to go, but I had all these other ingredients. I figured it wouldn’t hurt to throw them in along and see what happens.
My tropical carrot bread came out amazing and makes a great breakfast bread. For an added kick of flavor, try spreading on homemade pineapple jam or our family favorite carrot cake jam.

Adding up all the ingredients, I came up with this recipe costing around $7.63 for a loaf of tropical carrot sweet bread or $0.95 per serving size.
As homesteaders, I can save a little bit of money by growing a few of the ingredients in our backyard. The carrots and pecans are plentiful in our backyard garden and save us a little money since these ingredients are the majority of the price. My homesteader cost comes closer to $3.07 or $0.38 per serving size.

Tropical Carrot Bread
Ingredients
- 3 large eggs, …[$0.72]

- 1½ cup all purpose flour, …[$0.35]
- 1 tsp. cinnamon, …[$0.04]
- 2 tsp. baking powder, …[$0.08]
- 1 tsp baking soda, …[$0.04]
- 1 tsp. salt, …[$0.07]
- 1 tsp. vanilla extract, …[$0.70]
- 1 cup carrots, shredded…[$0.30]
- 1 cup pineapple, crushed or chopped…[$0.38]
- 1 cup raisins, …[$0.84]
- 1 cup chopped nuts, macadamia, walnuts, pecans…[$3.24]
Instructions
- Blend all wet ingredients together until smooth; eggs, oil, bananas, vanilla, and sugar.
- Add flour, cinnamon, powder, soda, and salt. Mix until all have been incorporated evenly.
- Fold in shredded carrots, chopped or crushed pineapple, raisins, and chopped nuts.
- Pour batter into a greased 8 inch bread pan. Bake at 350 °F for 1 hour.
- Remove from oven and let cool on wire rack.
- Optional to top with a cream cheese or vanilla glaze.
