Combine warm water, sugar and dry yeast in a large bowl. Mix together and let sit for 5-10 minutes.
Blend in remaining ingredients with a large spoon. Make sure you pour in melted butter slowly and at the end of batter mixture. Cover and set out on counter until morning for about 8 hours.
The Morning of
Fold eggs into batter. Pour the appropriate amounts into a well greased waffle maker and cook accordingly until golden brown and crispy.
Serve waffles immediately with your favorite syrup or freeze individual waffles on a cookie sheet then store in a resealable plastic bag to have for later. Pop them in a toaster oven or microwave to reheat.
