Chipotle coconut vegetables and rice is the perfect meatless dinner entrée for everyone in the family. Chopped full of your favorite vegetables and cooked in a sweet coconut milk sauce.
Saute chopped onion in olive oil over medium heat. After a few minutes, add 3 cups of assorted vegetables, garlic powder, and salt. Cook and brown for about 10 minutes.
Pour in remaining ingredients into browned vegetables. Stir everything together and cover. Simmer for about 30 minutes and stir mixture occasionally.
While vegetables are simmering in coconut sauce, cook rice in a pot accordingly.
Serve coconut vegetables over cooked rice hot and enjoy.
