Prep all your water bath canning, mason jars, lids and rings accordingly.
Slice strawberries and set aside.
In a large stock pot, combine sugar, Clear Jel, water, and lemon juice. Bring mixture to a boil while stirring often. I like having it on medium heat so to not scorch the mixture.
Stir or fold in sliced strawberries once stock pot mixture comes to a boil and mixture is thickened. Remember once processed and cooled, the filling will be thickened even further.
Reduce to low heat and spoon into sterile mason jars. Leave 1½ inch headspace.
