Soak 2 cups rolled oats and 2 tbsp ground flax seed in 2 cups milk for a couple of hours or overnight.
In a separate bowl, mix up 2 large eggs, ½ stick butter melted, and ½ cup raisinsadd this to the milk-oat mixture.
Finally, add all the dry ingredients (½ cup all purpose flour, 1 tsp baking powder, 1 tsp baking soda, ½ tsp ground cinnamon, ¼ tsp salt) to the wet bowl and mix.
On a greased griddle, add spoonfuls of batter to reach the desired size of pancake. You cook these like any other pancake. Cook until one side is brown, and then flip to brown the other side over medium heat.
