Instructions
In a cast iron or oven skillet, heat oil with chopped bacon and onion. Sauté for 10 minutes.
Remove bacon mixture and set aside in a separate bowl.
Clean and cut chicken breasts in half. Brown each chicken piece in hot cast iron skillet for 4-5 minutes on each side.
Toss chopped pears in a bowl with honey and chopped thyme. Pour pears on top of chicken along with bacon and onion mixture.
Roast the entire skillet chicken in oven on 350 °F for 30 minutes.
