If you choose to use frozen shredded zucchini as we often of, then there is one important thing to do. Make sure you squeeze out the shredded zucchini to get rid of the majority of the water. All the excess water will make the batter too runny and gives a funkier taste. Trust me, it is better to get rid of the water.

As for quick bread go, this one is relatively inexpensive. I calculated this recipe to cost around $2.83 for one loaf, which I can cut about eight large slices from costing $0.38 per serving slice. When I make this bread, I usually make this with homegrown zucchini, homemade applesauce, and farm-raised eggs. My cost comes to about $1.30 or $0.16 per serving slice.

Zucchini Quick Bread with Lemon Glaze
Ingredients
- 2 cups all purpose flour, …[$0.46]

- 1 tsp. cinnamon, …[$0.04]
- ¼ tsp. ground nutmeg, …[$0.09]
- ½ tsp. salt, …[$0.04]
- ½ cup milk, …[$0.12]
- ½ cup applesauce, …[$0.55]
- 1 large egg, …[$0.23]
- 1½ cups zucchini , shredded…[$0.75]
- ½ cup powdered sugar, …[$0.17]
- 1½ tbsp. lemon juice, …[$0.07]
Instructions
- Preheat oven at 350 °F and grease a loaf pan.
- Combine all dry ingredients together; flour, white sugar, baking soda and powder, cinnamon and nutmeg, and salt.
- Blend in milk, applesauce, and egg together until smooth. Fold in shredded zucchini. You can use either fresh or thawed frozen squash.
- Pour in greased loaf and bake for 50-60 minutes or until toothpick comes out clean. Take out and cool on wire rack.
- Whisk up powdered sugar and lemon juice in a small bowl and drip over bread when it is cool.
